This is the second recipe in a series on Aspire-Canada featuring mouth-watering Dash diet recipes that are sure to tantalize and please while at the same time offering up a health dose of vitamins, minerals and anti-oxidants. Spinach and Mangoes are colorful super foods in their own right and high in healthy antioxidants. Combine these with other ingredients in the recipe such as oranges, pecan halves, red leaf lettuce and tomatoes and this becomes a super meal in its own right. Have this salad on its own or as a side dish – either way you’re on your way to funner, healthier eating.  <\/p>\n

Ingredients:<\/strong>
\n2 blood or navel oranges or tangelos, peeled & sectioned (remove seeds)
\n5 cups fresh spinach leaves, washed & stems removed
\n3 cups red leaf lettuce, torn into bite-size pieces
\n1 cup peeled, diced ripe mangoes
\n1 small red onion, sliced razor thin, separated into rings
\n1 cup toasted pecan halves
\nAdd chicken if desired<\/p>\n

Balsamic Orange Spice Dressing:
\n1\/3 cup balsamic vinegar
\n1 tablespoon Tortuga Light Rum (add more if desired)
\n1\/3 cup orange juice (from salad oranges, adding more if necessary)
\n2\/3 cup olive oil
\n1\/4 cup teaspoon ground allspice
\n1 teaspoon Tortuga Hellfire Hot Pepper Sauce<\/p>\n

Directions:<\/strong>
\nOver a small bowl, carefully remove the white membrane & fiber from orange sections, saving any juice & pulp that drips for the dressing & cut each section into bite size pieces. Chill until ready to use.<\/p>\n

Make the dressing:
\nCombine all ingredients in a jar or covered container & shake well. Refrigerate several hours, until well-chilled.<\/p>\n

In a large bowl, combine the spinach, lettuce, oranges, onion, mango & pecans. Add desired amount of dressing & toss lightly.<\/p>\n
