For some reason cauliflower always seems to stump me though, I dislike eating it raw and don\u2019t love its consistency in smoothies. I decided to try a raw cauliflower roll recipe that I found\u00a0<a href=\"http:\/\/talesofakitchen.com\/raw\/cauliflower-cous-cous-cucumber-rolls\/\">online<\/a>\u00a0and was not\u00a0disappointed!<\/p>\n<p>These rolls are the perfect farmers market treat. They are fresh and crunchy with a mildly sweet flavor. I couldn\u2019t stop eating them!<\/p>\n<h3>Ingredients:<\/h3>\n<ul>\n<li>3 large cauliflower florets<\/li>\n<li>1 T sultanas\/raisins OR 1 pitted date<\/li>\n<li>Handful parsley<\/li>\n<li>1 T lemon juice<\/li>\n<li>2 T raw tahini OR 2 T raw nut butter<\/li>\n<li>1 Pinch Chili powder<\/li>\n<li>2 Small Cucumbers (use the little ones for pickling, not the gigantic ones)<\/li>\n<\/ul>\n<h3>Instructions<\/h3>\n<ol>\n<li>Thinly slice the cucumbers and lay on paper towel to absorb some of the excess water.<\/li>\n<li>Put everything except the cucumbers in a food processor and blitz a few times until the mixture has a pebble-like consistency.<\/li>\n<li>Spread about a tablespoon of the mixture onto the length of each cucumber.<\/li>\n<li>Gently roll up and spear with a toothpick to hold together.<\/li>\n<\/ol>\n<p>Let me know if you try it!
