Yum!<\/p>\n<p><a href=\"https:\/\/aspire-canada.com\/wp-content\/uploads\/2015\/05\/Lobster_Salad_Recipe-620x350.png\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-4750\" src=\"https:\/\/aspire-canada.com\/wp-content\/uploads\/2015\/05\/Lobster_Salad_Recipe-620x350.png\" alt=\"Lobster_Salad_Recipe-620x350\" width=\"620\" height=\"350\" \/><\/a><\/p>\n<p><u>Ingredients<\/u><\/p>\n<ul>\n<li>Lobster \u2013 1.5 lb.<\/li>\n<li>Fava Beans \u2013 1 lb.<\/li>\n<li>Fennel- 1\u00a0\u00a0 (Shave)<\/li>\n<li>Persian Cucumber \u2013 1 cs. Round<\/li>\n<li>Fresh Apricot- 4 ea.<\/li>\n<li>Dandelion Greens<\/li>\n<li>Golden Beets \u2013 2 ea.<\/li>\n<li>Green Beans \u2013 \u00bd lb.<\/li>\n<li>Radish \u2013 1 bags (slice)<\/li>\n<li>Spring Baby Carrots- \u00bd lb.<\/li>\n<\/ul>\n<p><u>Method<\/u><\/p>\n<ul>\n<li>Poach 2 x 1 \u00bc Lobster for 14 min<\/li>\n<li>Remove the meat and dice<\/li>\n<li>Clean dandelion greens well (very sandy)<\/li>\n<li>Slice Apricots into 8 pieces, shave fennel slice radish and cucumber round<\/li>\n<li>Remove Favas from their\u00a0pod<\/li>\n<li>Cook and peel Fava Beans<\/li>\n<li>Roast whole and peel beets- dice and sprinkle with raspberry vinegar (balsamic)<\/li>\n<li>Blanch baby carrots for 2 min.<\/li>\n<\/ul>\n<p><u>Apricot and Orange Vinaigrette \u2013 (note: Vin. to be in 1 oz. cups)<\/u><\/p>\n<p><u>Ingredients<\/u><\/p>\n<ul>\n<li>1\/2 cup fresh apricot<\/li>\n<li>Zest of 1 orange<\/li>\n<li>1\/4 white wine vinegar<\/li>\n<li>1\/8 cup EVO (optional)<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p><u>Method<\/u><\/p>\n<ul>\n<li>In Blender- puree apricots with zest from 1 orange and vinegar<\/li>\n<li>Season with salt and pepper<\/li>\n<li>Extra Virgin Olive Oil is optional \u2013 Add slowly to taste<\/li>\n<\/ul>\n<p><u>Salad Preparation<\/u><br \/>\nAdd Dandelion leaves and vegetables in large bowl, add some dressing and mix.\u00a0 Add Lobster and serve!<\/p>\n<p>&#8211; See more at: http:\/\/www.lorensworld.com\/food-drink\/recipe-healthy-refreshing-lobster-summer-salad\/#sthash.yvaLmppd.dpuf<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Warmer weather is here and salad season is upon us!
