Watermelon, Prosciutto and Manchego Skewers
These skewers are bound to be the stars of the night! Succulent watermelon, sharp Manchego cheese (Spain’s most famous cheese, so named because it originally was made only from the milk of Manchengo sheep that grazed on the plains of La Mancha. It’s a rich, golden, delicious cheese that can be found in larger gourmet markets) and salty prosciutto. Feel free to subsitute the cheese for a fun quick skewer thats bound to please.
Here’s what you’ll need:
- 1 small seedless watermelon
- 1 small wedge Manchego cheese
- 3 ounces thinly-sliced prosciutto
- Extra-virgin olive oil and freshly ground black pepper
Directions:
Cut the melon off the rind and cut into bite-sized cubes. Trim the rind off the cheese and cut into bite-sized cubes. Cut the prosciutto into thin strips and roll the pieces into a folded shape.
Assemble the stacks: Layer a cube of watermelon on a cutting board, place a cube of cheese on top, followed by a piece of prosciutto. Carefully insert a wooden pick or skewer to secure. Drizzle over a little olive oil over each skewer and season with a little pepper.
Grilled Pineapple with Butter Rum Sauce
What better way to top off the night than with grilled pineapple with butter rum sauce! This quick and easy recipe will leave you feeling like a star.
Ingredients:
8 tablespoons (1 stick) unsalted butter
1 cup lightly packed brown sugar
½ cup dark rum
Pinch of nutmeg
Pinch of cinnamon
Pinch of allspice
8 slices, 1-inch thick, fresh pineapple wedges, cored
Directions:
- In a small saucepan, cook the butter, sugar, rum and spices over medium heat, stirring, until the sugar is dissolved and the butter melted.
2.Bring to a simmer and let cook for about 10 min. longer, stirring occasionally, until the sauce is slightly syrupy and coats the back of a spoon. Keep warm.
3. Heat the grill and brush or spray it with a touch of oil so the pineapple doesn’t stick. Grill the pineapple slices until warmed through and carmelized, about 10 min. on each side.
4. Serve immediately with the warm sauce.
